Made with beetroot powder for a natural reddish hue, this gluten-free mug cake recipe is low-carb, and free of refined sugar. All you need is 5 minutes of hands-on prep time, then sit back, relax and let the oven do the work!

Tools
·        Large ceramic mug
·        Medium mixing bowl
·        Small mixing bowl

Ingredients
·        1 ½ T coconut flour
·        2 T almond meal
·        1 T tapioca starch
·        1 T raw cacao powder
·        3 T beetroot powder
·        ½ t baking powder
·        ½ T stevia powder
·        ¼ cup almond milk
·        1 egg
·        Fresh berries for topping (optional)

Instructions
1.     Preheat the oven to 350°F and grease a large ceramic mug with coconut oil.
2.     In a mixing bowl, combine the coconut flour, almond meal, tapioca starch, raw cacao powder, beetroot powder, baking powder, and stevia powder.
3.     In a small bowl, beat the almond milk and egg together.
4.     Mix the wet ingredients with the dry ingredients until you get a thick batter.
5.     Transfer the batter to the prepared mug and bake for 12 to 15 minutes.
6.     Top with berries before serving (optional).
